…the week.  Because I know that working or not, we are all busy moms.  Busy with life and yet still wanting to prepare tasty, good meals for our families.  I came up with a great time saver and wanted to share it with all of you.  If you’re like me sometimes just remembering to defrost the meat can put a damper on dinner preparation so forget having the time to marinate it!  Well, here’s a great time saver for you.  I have a wonderful and simple marinade my sister shared with me.  It works great on chicken and pork but you’ve got to let it sit for at least two hours in order to get the proper effect.  Well, here’s the shortcut: when you get home from the store, open up your meat, prepare your marinade and stick it all in a ziploc bag.  Push the air out.  Let it marinate overnight and then pop it in the freezer.  When you’re ready to eat you just defrost and it’s already seasoned for you!  WOW.  Seriously.  This made me so happy this weekend.  It tasted WONDERFUL and was so super easy.  You can grill it, roast it, whatever.  It’s wonderful.  Give it a go!

  • 1/2 cup soy sauce
  • 1/4 cup red wine vinegar
  • 1 teaspoon oregano
  • 1/2 teaspoon basil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon pepper

Mix all of that together and then add

  • 1/4 cup olive oil
